Appenzeller Toast

Appenzeller Toast (also known as Toast Williams) follows in the quick and easy 'Toast' tradition, which includes such classics as Toast Hawaii or Toast Pomodoro.

After posting this Toast Hawaii recipe last weekend, I learned that there is intense debate over where the cheese should be placed in the lineup. Some readers objected to the cheese being placed under the fruit and preferred a blanket of cheese covering the entire toast. Others argued that the juicy pineapple slice and appetizing red of the cherry should not be hidden under a mantel of cheese.

Fortunately, I consulted my sister in law about the Appenzeller Toast. She said that the cheese could go under or over the fruit, as long as the bacon was in the shape of the Swiss flag. No debate there. 


Toast bread

Mustard

Butter, soft

Processed cheese

Canned pears

Bacon


Preheat the oven to 200C / 400F / gas mark 6

In a small bowl, mix together some soft butter and mustard to make a paste. Spread this on your toast bread.

Now, assemble the slices. The order is:

Bake for about 15 to 20 minutes, or until the cheese is melted. If you'd like a well done top, put under the broiler for a few minutes.
