Bärlauch Pesto
It’s Bärlauch season!
This is a mini batch of pesto, perfect for spreading on a few sandwiches, spooning over pasta or scrambled eggs, or tossing with roasted vegetables.
I also use it to make Bärlauch Spiralen, the perfect puff pastry apéro snack.
This is a mini batch, using my Bamix immersion blender.
20-30 g Bärlauch, roughly chopped
15 g pine nuts
15 g parmesean or Sbrinz cheese, grated
30 g olive oil
a squeeze of lemon juice
salt and pepper
Put everything in a food processor or the food processor attachment of the Bamix mixer and puree.
Fill into a clean jar and store in the fridge.
I use this to make these Bärlauch Spiralen.
